Combine the dressing, curry powder, red oinion and grlic in a small bowl and set aside.Place the bhuja mix and rocket in a large mixing bowl. Slice the cheeks off the mango, cut away and discard the skin then cut the flesh into slices. Using either a slicing machine or vegetable peeler, thinly slice the courgettes into ribbons.
