Set aside a large block of time to make this although most of the time, you will be just waiting for the layers to cool and set. Stir until fully dissolved and pour into a 13" by 9" by 2 1/2 " pan. Refrigerate for 40 minutes until set. Meanwhile, prepare the second package of red gelatin with 1 1/2 cups boiling water in a blender and add 4ozs. neufchatel cheese and blend well. Allow this to cool while the first layer is setting. Then carefully spoon this layer on top of the first. Repeat this process with the orange, lemon and lime gelatins until you have all 8 layers, alternating a plain layer and a cheese layer. The trick to this recipe is in the timing. Prepare 2 or 3 layers at a time so that they can be cooling while the previous layer is setting. If the gelatin is too hot, it may melt the previous layer and run together. This is best served "unmolded" so prepare at least 3 days before you plan to serve it so that it will be firmly set. Run a knife around the outside edges to loosen then set the pan in a sink filled with very hot water for about 10 seconds. Place a large platter, tray or cookie sheet on top and carefully flip over both at once to unmold. I use regular gelatin but it can be made with sugar-free gelatin to further reduce the calories.
