1 T. finely chopped oregano
2 to 3 cups coarsely chopped romaine
1/2 lb feta, crumbled (1 cup)
4 to 8 peperoncini

Makes 4 servings:Toss black-eyed peas, tomato, and parsley with vinegar, 1 T. olive oil, 1/2 t. salt, and 1/4 t. pepper. Marinate, stirring occasionally, 15 minutes. Meanwhile, toss together remaining oil, cucumber, olives, onion, lemon zest and juice, oregano, 1/2 t. salt, and 1/4 t. pepper in a large bowl. Divide the romaine onto four plates and top each with 1/4 each of the veggie mixtures. Top with feta and place a pepperoncini or two on each plate.
