I took a traditional full fat salad and changed it around to be more healthful. The dressing is a take on cesar salad but it went great in this salad as well. Look for my Greek Chicken to place on top. Even the kids loved this recipe.

The ingredients for Healthy Greek Salad are:

3 cup, shredded Romaine Lettuce
3 plum tomato chopped
1/2 cup, chopped red pepper
Red Onions, raw, .5 cup, sliced
1 tbsp Oregano,
1/4 cup Kalamata olives pitted and chopped
3 tbsp Egg substitute, liquid (Egg Beaters)
2 cloves Garlic, crushed
2 tbsp. of anchovy paste
1 tsp Lea & Perrins, Worcestershire Sauce
1 tsp *Grey Poupon Dijon Mustard,
1 tsp. lemon juice (*1/2 a lemon)
1/4 cup Bertolli Light EVOO
1 oz. Crunmbled Fat Free Feta (President is best!)


How Do I Make Healthy Greek Salad?

Here is how you make Healthy Greek Salad:

Get large salad bowl with enough room to mix. Cut tomatoes, peppers, and onions. Add oregano and mix. Chop romaine ( i used three small heads) and add to top of tomato mixture. Sprinke a hand full of feta and chopped Kalamata olives onto lettuce. Add ground black pepper to taste. In a separate bowl combine egg substitute, garlic, anchovy paste, dijon mustard, worcestershire, and lemon juice. Using a whisk, slowly incorporate approx. 1/4 cup of olive oil. I add the oil only until it reaches a thin consistency and tastes just right. Some like it thicker. Pour dressing over salad and toss to cover all veggies and lettuce.
