1/4 cup pine nuts
2 T extra virgin olive oil
1/2 medium red onion, thinly sliced
2 cloves garlic, minced
8 oz orzo pasta
3 oz feta cheese, crumbled
kosher salt & freshly ground pepper


How Do I Make Warm Orzo Salad with Beets and Greens?

Here is how you make Warm Orzo Salad with Beets and Greens:

1. Heat the piine nuts in a dry skillet, over med heat, until they begin to brown - watch carefully. Remove from heat, transfer to a bowl.2. Peel beets & chop them into bite-size pieces. Remove stems from beet greens and slice the leaves into strips. Wash greens thoroughly to remove grit.3. Heat the olive oil in a skillet over med heat. Add sliced onion & garlic. Cook until onions are tender & golden brown - about 10 min. Reduce heat to med low and add beet greens. Cover & cook, tossing occasionally, until greens are wilted - approx 5 min.4 Meanwhile, cook the beets in a pot of salted water, until just tender, approx 10-12 min. Remove beets from pot & set aside. Return water to a boil & add pasta. Cook according to package directions (al dente) & drain. Add the orzo to a bowl, along with beets, pine nuts, beet greens, & crumbled feta. Toss, season w/ salt & pepper to taste, & serve.
