1/4 c fresh mint leaves
3-4 tablespoons olive oil

Here is how you make Mom's Israeli Salad:

Makes about 12 servings 1 cup servings.Dice cucumbers, peppers, red onion, celery, & tomatoes. Slice or dice carrots. Mince garlic. Place all veggies in large mixing bowl add olive oil and lemon juice and stir to coat. Add chickpeas, mint, parsley, salt and pepper.For best flavors, place in fridge and let meld overnight and adjust spices to taste. Can be served cold or at room temperature.I have also added a green pepper at times. There are no hard and fast rules to the veggies, add more or less of the ones you like. This is a very colorful, eye pleasing salad. This salad always brings me back to my trips to Israel.
