Wash vegetables thoroughly and do not peel. Shred beets, followed by shredding the other vegetables. Mix sunflower seeds thoroughly with raw shredded vegetables. Put mixture into a salad bowl lined with bok choy leaves. Radishes can be either shredded or thinly sliced. If they are thinly sliced, there is less chance the beets will color them red.
