1 cup Gardenia brand pickled vegetables, drained and rinsed
1/2 cup green and black olives, whole or sliced
6-slices lowfat ham
6-slices lowfat turkey breast
1 cup artichoke hearts in water, drained
1 cup cubed lowfat Swiss cheese
4 tbsp crumbled, lowfat Gorgonzola cheese

Dressing:
3 tbsp extra virgin olice oil
2 tbsp apple cider or red wine vinegar
1 clove fresh garlic, smashed
1 tbsp dried basil and parsley
1 tsp salt and pepper

Here is how you make Lowfat Antipasta Salad:

Smash the garlic clove on a board with a knife; remove the skin. You want the garlic clove completely smashed. In a small bowl combine the vinegar, garlic, herbs and seasonings; let sit 5 minutes so the flavors blend and the acid in the vinegar breaks down the garlic. While you are quickly whisking the vinegar mix, slowly add the olive oil to emulsify. Whisk until blended. Set aside. Drain and chop the artichoke hearts corsely (chunks); drain the Gardenia vegetables, place in a bowl of cold water. With your fingers or a spoon, toss the veggies in the water; drain and then add to another bowl of cold water. Toss and then drain. St aside.In a large bowl combine all ingredients except dressing; pour the oil & vinegar mix over the lettuce, etc. and toss to thoroughly coat. Serve on a plate or in a bowl.
