This is not a recipe for a complete salad. This is a mix of dried beans, lentils, and whole grains that I cook up in big batches then package, cooked, in smaller batches in freezer bags. I then add it to some chopped kale and a little viniagrette for a nutrient-rich salad. Add 12 cups of water. (Did I mention this needed to be a huge pot? I have an enormous stock pot/tall dutch oven that I use for this. If you don't have a pot this big, you can cook the ingredients separately, according to their respective instructions) Bring to a boil, stirring occasionally, then take pot off the heat, cover tightly, then leave the mixture alone for an hour. No peeking!Into another pot (large but not huge), dump the wild rice and black beans (frijoles), along with 1 tsp salt. Bring this mixture to a boil, then, likewise, cover tightly, take off the heat, and leave along for one hour (don't peek in this pot either). At the end of the hour, mix everything together (do not drain) into the huge pot, and refrigerate (or at least put the huge pot into a cool place) overnight, or for at least six hours.
