1 cup chopped romaine lettuce
1 large tomato, diced
1/4 medium-sized onion, sliced
1 cup cooked chickpeas (garbanzos)
80 grams tuna (canned in water)
10 black olives, halved
1 Tbsp parmesan cheese
1 Tbsp Olive oil
Red wine vinegar

1/2 eggplant, chopped and "bled"
6 Tbsp tomato paste
1/2 glass red wine
salt
pepper

How Do I Make Moussaka Salad?

Here is how you make Moussaka Salad:

Place tomato paste and red wine in a medium-sized deep saucepan. Mix together and heat to boiling. Add eggplant and simmer.While the eggplant is cooking, mix together all of the salad ingredients except the parmesan, oil and vinegar. Add oil and vinegar and toss. Prepare salad mixture on two plates.When the eggplant is thouroughly cooked and the sauce has reduced by half, add salt, pepper and dried basil to taste. Let simmer for another few minutes to absorb the flavours of the spices. Cool for 3-4 minutes.Ladle the moussaka sauce onto the salad base.
