4 Tbsp Olive Oil (Extra Virgin preferred for flavor)
6 Tbsp cold water
4-6 Roma/Plum tomatoes (minus the "guts")
2 cups fresh spinach leaves
1 large bell pepper (yellow, orange, or red)
1 small can sliced black olives
1 large avocado
1 15oz can kidney or black beans, drained and rinsed
Feta Cheese (OPTIONAL--not accounted for in figures)

NOTE: Rinsing and draining the beans and black olives well will reduce the sodium count. Also, reducing the amount of seasoning mix you use will do so as well.Directions:Make pasta and seasoning mix as directed on the box.While pasta boils, chop and deseed the vegetables and avocado**. Chopping the spinach is entirely up to you (I do). Rinse and drain beans. Mix tomato, bell pepper, spinach, black olives, and beans together with the seasoning mix. Set aside.drain and wash pasta as directed on the box. when its cooled enough, mix pasta and fixings together. more olive oil is totally up to you.
