*whenever I make this salad I never measure anything. It depends on how many people you are planning to serve. I normally make this only for pot-lucks/family gatherings so I make it to feed about 15-20 people (but I have made it for 50+ people). For 15-20 people, I use an entire package of pasta, a whole bag of bagged spinach, a regular sized jar of the sundried tomatos and artichoke hearts. For less people just reduce the recipe as necessary

Here is how you make Spinach and Penne Pasta Mediterranian Salad:

1. Cook pasta until al dente. Take care not to over-cook the pasta because it will fall apart when all the ingredients are combined.2. Rinse spinach and pat dry. Make sure spinach is dry before combining it with other ingredients. Place spinch in a serving dish that is big enough for mixing.3. Drain pasta, but reserve some of the pasta water. Use some of the olive oil from the artichoke hearts and sundrired tomatos to lightly coat pasta.4. While pasta is still warm, place over spinach so that the spinach can begin to lightly wilt.5. Place artichoke hearts and sundrired tomatos with the pasta and spinach along with half of the pine nuts, and kalamata olives. Mix all together.6. Add salt and some pepper to taste.7. Place remaining pine nuts and kalamata olives on top as a granish.8.
