1 medium cucumber skinned and deseeded, chopped
1 green pepper, chopped
1 large sweet onion, chopped
1 container crumbled feta cheese
20 kalamata olives (optional)
2 chicken breasts, grilled and cut into bite size pieces or served on the side ( Optional)
For Dressing:
4 TBS Olive Oil
8 TBS Vinegar- Red wine or Balsamic work well
1 tsp spicy brown mustard

Here is how you make Peasant Salad:

Boil Potatoes until firm, but not falling apartWhile potatoes are boiling cut up vegetables for saladmix all cold vegetables togetherWhen potatoes are done rinse in cool water. Cut into bite sized pieces and put in refrigerator to cool.While potatoes are cooling in fridge grill chicken.To make dressing place 1 tsp of mustard into small bowl with 8 tbs of vinegar. Slowly whisk the olive oil into the bowl. Add salt and pepper to taste.Plate vegetables and potatoes sprinkle feta cheese and olives over the salad and drizzle vinaigrette over top.
