In a large pot, bring the water to a boil. Add the potatoes. Return the water to a simmer, cover and cook for 15-20 minutes, or until the potatoes are done. In another pan add enough water to cover 2 eggs, bring the water to a boil, add the eggs and boil for 4 minutes. When potatoes and eggs are cooked remove them from the water and allow them to cool.Cut the potatoes into small chunks and place them in a large bowl.
