5 lb potatoes (should make about 10 cups of mash potatoes)
475 ml mayonnaise (low fat version) - or to taste
1 large onion, chopped
3 small sized apples; peeled, cored, & chopped
2 cups frozen mixed veggies (carrots, peas, corn)
1 tsp Paprika (or to taste)
2 -3 cups Water
2 -3 tsp. Lemon Juice


How Do I Make Carley's Newfoundland Style Potato Salad #1?

Here is how you make Carley's Newfoundland Style Potato Salad #1:

Method: Peel & boil potatoes. Drain water. Peel, core & chop apples first. Soak the apple in a mixture of water with a small amount of lemon juice (approx. 3 -4 tsp. in 2 - 3 cups water). While apples are soaking in the lemon water mixture (to keep them from turning brown), chop onions, and mash potatoes with a potato masher. When all ingredients are prepared, drain apples. Mix onions, apples, & veggies into mashed potatoes. Mix in mayonnaise. Press into bowl so the top is smooth & flat. Sprinkle with paprika on top to decorate. NOTE: For best results, if you're having a party that's planned, for example, at supper time... make salad the night before. Time to let it sit and have the "strength" of the onions and apples to go completely through the salad, and time for it to be very cold will make all the difference in your salad being a "great hit" and it being "just another salad"! If I can't make it the night before... I make it first thing in the morning so it's finished & ready to put into the fridge to set for the day no later than 9:00 AM. If the party is planned for earlier than supper time... I don't make it on the same day... I make it the night before!I make this to bring to all our family functions. Everyone requests that I bring it to any pot-luck style function that we're having. I've become known as the potato-salad person in our family!
