1 cup of chopped celery
1/2 cup of chopped onions
1/4 cup of chopped green peppers
1/2 of a roased red pepper (packed in water) pat dry & chopped
4 hard boiled egg whites
4 cups of diced, boiled potatoes
2 slices (about 1/4 ounce) pre-cooked bacon, crisped up
For the dressing:
1/2 cup of Miracle Whip Light dressing
1 T yellow or spicy brown mustard
3 T vinegar - cider or white
2 T Splenda-granular
Water to thin to desired consistency
Salt & Pepper to taste

Here is how you make PA Dutch Potato Salad - Lightened Up:

Makes about 8-1/2 cup servingsPeel and dice potatoes, place in a large pot and just cover with water. Add a palm-ful of salt to the cooking water. Boil the potatoes until just fork tender - about 10-15 minutes. Drain the potatoes and spread out on a plate or sheet pan to cool off. Chop the celery, onions, green pepper, roasted red pepper & egg whites. Add to a large bowl & when the potatoes are cool add those to the vegetables. Crisp the pre-cooked bacon for a few seconds in the microwave, allow to cool and chop or crumble it over the potato/vegetable mix. In another smaller bowl, whisk together the Miracle Whip, mustard, vinegar and splenda. Add water a tablespoon at a time until it becomes the desired thickness. Pour dressing over the potatoes, eggs, and vegetables. Stir to combine and add salt & pepper to taste. Don't be tempted to add more Miracle Whip - this is plenty of dressing for the amount of potatoes and vegetables. In fact, if you added alot of water to make the dressing thinner, you may not even need all of it. Garnish with some fresh chopped parsley if desired. Chill for a few hours and enjoy!
