*Celeriac, 3 medium (aka: celery root), cook unpeeled

Here is how you make Polish Potato Salad:

The Day Before: Boil celeriac, potatoes and carrots in a large soup pot until tender (can penetrate with a sharp knife but they're not falling apart). I boil about 12 cups of water and add veggies sequentially. Cut the root ends of the celeriac off and rinse before adding. Add celeriac first (cook 15 mins), potatoes second (add at the 12 min mark) and then carrots (8 mins). In a separate pot, hard boil six eggs. Let all ingredients cool and refrigerate over night. In the a.m., peel celeriac and potatoes. Dice celeriac, potatoes and carrots into bite-sized pieces and place in a large mixing bowl. Dice eggs and pickles and add along with onion.In a separate bowl, whisk mayo, mustard and seasonings. Add to veggies and stir to coat. Refrigerate until ready to serve.Serving Size:? 1 cup
