Here is how you make Summer Potato Salad:

Pre-cook the potatoes and let them cool. When they are cool, dice them into cubes.Combine soup mix and water and bring to the boil, stirring, then simmer for 2 minutes. Cool. Stir in milk and sour cream. Then add chopped spring onions, diced Gherkins and chopped boiled eggs to soup mixture.Pour soup mixture over potatoes and toss gently but thoroughly.Cover and chill until ready to serve.
