8 oz Chicken Apple sausage (Trader Joe's), cut into 1/4-inch thick slices
1 T olive oil
1 clove garlic, minced
3/4 c sweet bell peppers (red, yellow, &/or orange)
1/2 c chopped green onion, including the white bulb
1 T unbleached white flour
2 t sugar
1 T Dijon mustard
1/8-1/4 t black pepper, optional
1/4 c chicken broth, organic, free range (Trader Joe's)
1/4 c water
2 T Orange Muscat Champagne vinegar (Trader Joe's) (or any you have on hand - Balsamic would be nice)
10 oz bag chopped Kale (Trader Joe's); remove any large stems & save to substitute for celery in the "Waldorf" Salad

Here is how you make Sweet Potato, Kale, and Sausage Salad 4/17/2012:

Wash & trim rough ends of the sweet potatoes. Pierce liberally with a fork, then microwave till desired doneness (microwaves vary so can't give an exact time on this, but it takes less time than microwaving regular baking potatoes). Let cool on cutting board, then cut potatoes into chunks while you heat a large skillet over med-high. Once heated, spray skillet with cooking spray & add the sausage cooking for 2-3 minutes until lightly browned. Remove sausage from skillet (can drain on paper towels, if desired).For the dressing: Put the olive oil in the pan, then the garlic, sweet peppers, & onion; cook till tender but not browned. Stir in the flour, sugar, mustard, & pepper, if using. Stir in the chicken broth, water, & vinegar. Cook & stir till thickened and bubbly. Next, stir in the kale, then put the sweet potato chunks & chicken sausage back into the skillet, stirring gently. Serve immediately. Serves 4Serving Size:?4 servings
