Here is how you make Quinoa and Garbanzo Summer Salad:

Chop veggies (cucumber, tomato & celery) and throw them in a bowl.Add 2 cans of garbanzo beans (chickpeas)Add 2 cups of cooked quinoa (I like to cook mine in broth instead of just water)In a separate, small bowl (I use one with a pouring lip) mix olive oil, lemon juice, garlic and chopped basil.Pour the dressing on the salad. Toss/stir/shake it up.It's good right away but even better the next day after the flavors have married. I sprinkle fresh feta on mine right before I dive in.
