Bring water to a boil and a heavy medium saucepan. Meanwhile, wash quinoa in 3 chages of cold water then drain in a fine-mesh sieve. Stir quinoa into boiling water and return to a boil, then turn down to a simmer, covered, until quinoa has absorbed all the water. Remove from heat and let stand, covered, for 5 minutes. Transfer to a large bowl and cool completely, stirring occasionally. Add red pepper, edamame, shallots, and currants.In small bowl mix all ingredients for Viniagrette and whisk well.
