1 15oz. bag steamer fresh corn
1 yellow pepper
4 green onions
2 tomatoes
1 Avacado
1/2 cup cilantro
1 cup salsa
2 tbsp. lime juice
2 Tbsp. apple cider vinegar
1 Tbsp cumin
2 tsp chili powder
1 Tbsp. garlic
Salt and pepper to taste

Here is how you make Ann's Rice and Beans Summer Salad:

In one bowl put all your fresh ingredients...diced peppers, cilantro, tomato and sprinkle with lime, cider vinegar, seasonings, salsa and salt and pepper. Do not mix (over mixing makes it mushy).Dice your avacado and sprinkle with a bit of lime juice and set aside for top of bowls.Heat up your corn and drain, place in large bowl. Heat up your rice and put it in bowl with corn. Rinse and drain the black beans very well. Heat in the microwave for 2 minutes then put in bowl with corn and rice.
