1 large head of cauliflower, chopped to 1/2 inch pieces
6 large hard boiled egg whites
1/2 pkg ranch dressing mix
3/4 cup reduced fat mayonnaise
6 oz plain, nonfat Greek yogurt
3 T Hellmann's Dijonnaise
2 T nonfat evaporated milk
1 cup chopped onions
2 celery stalks, chopped
1/4 cup chopped chives
3 T seasoned rice vinegar
2 dill pickle spears, chopped small
1/4 tsp salt

Here is how you make FauxTato Salad:

Place chopped cauliflower in a large microwave safe bowl and pour 1/3 cup of water over it. Cover and cook for 6-8 minutes.In another bowl, mix together ranch mix, mayo, yogurt, dijonnaise and salt. Set aside.Cool and drain cauliflower. Put one cup in a blender with evaporated milk. Puree for 15 seconds. Add mayo mixture to blender and puree until creamy.Chop onions, celery, eggs and chives. Add to remaining cauliflower. Toss with vinegar. Pour mayo mixture over vegetables and mix well. Chill for at least 2 hours before serving.
