1 tsp sea salt, divided
1 cup wild rice
1/4 cup lemon juice
1/4 cup olive oil
1 clove minced garlic
1/2 cup chopped fennel bulb, core removed
1/2 red or yellow pepper, diced
1/2 cup chopped red cabbage
1/2 cup chopped fresh parsley
2 cups finely chopped romaine lettuce
6 TBSP Gorgonzola cheese crumbles for garnish (optional)-also delish with blue cheese crumbles

Here is how you make Rainbow Road Salad:

Cook wild rice according to package directions, or use a rice cooker-4 cups water or stock to 1 cup wild rice. Whisk lemon juice, olive oil, garlic and half of the sea salt in a LARGE serving bowl. Add fennel, pepper, cabbage, parsley, and romaine and toss thoroughly. Once rice is cooked, cool to room temp. Toss with veggies.
