This is my fiancee's favorite salad. The colorful veggies make it just as appealing to the eye as it does to your taste buds. I sometimes substitue chicken or shrimp if that is what is handy...or leave the meat off for a vegetarian option.We find that a dressing is not needed with this recipe becasue all the flavors mix together so nicely but we often add a couple of tbsp hemp oil just for a little added flavor. 4 oz filet of salmon
2 garlic cloves (optional)
2 tbsp lemon juice

2 tbsp shredded parmesan cheese

Here is how you make Kelly's Favorite Colorful Salmon Salad:

SaladPlace the spinach in a bowl or on a plate and top with the pepper, avocado, tomatoes, onion and cucumber.SalmonPlace filet on a piece of tin foil, cut garlic gloves into ? and stick each piece into the filet. Salt and pepper if you wish, add lemon juice and wrap. Put on the bar b que or in the oven (350) and let it ?poach? in the lemon juice. Keep an eye on it though (especially if it is on the barbeque) because it does not take long to cook.If you are in a hurry simply cut the filet up into bite sized pieces and cook in a pan on the stove top with the lemon juice and garlic thrown in the mix.When salmon is cooked place it on top of the salad, sprinkle the parmasan cheese on top.
