2 cloves garlic, minced
1/2 tsp finely shredded lemon peel
3 c whole resh baby spinach leaves
2 medium tomatoes, cut into thin wedges
1 medium cucumber, quartered lengthwise and sliced 1/4 inch thick
1/3 c pitted kalamata olives
1/4 c chopped red onion
1/4 c thinly sliced radishes
1/4 c crumbled feta cheese (1 oz)
1 recipe Greek Vinaigrette -
3 tblsp extra virgin olive oil
1 tblsp red wine vinegar
1 tblsp lemon juice
1 tblsp chopped fresh mint
1 tblsp chopped fresh oregano
dash of kosher salt
dash freshly ground black pepper

Meanwhile, in a large bowl combine spinach, romaine tomatoes, cucumber, olives, red onion and radishes, toss to combine and set aside.3.
