Dressing: 1/4 c. olive oil, 2 T. balsamic vinegar, and 1 t. dijon

Salad: 2 (3-4) oz tenderloin steaks, 6 T. crumbled blue or gorgonzola, 1 tomato, 6 cups mixed greens, 1/2 sliced onion and 1/2 sliced pepper. 1/4 cup sliced /chopped walnuts.

Here is how you make Blackened Steak Salad:

Spice: Mix all ingredients and spread on plate. (Can make up to 1 week ahead).Whisk oil, vinegar and mustard in large salad bowl. Season with salt and pepper. Add greens, pepper and onion and toss to coat. Divide between 2-3 plates. Spread spice mix on plate. Coat steak with spice mix. Spray with olive oil spray. Heat heavy large skillet on high til very hot. Add steaks and cook to desired doneness (about 2 min on each side for medium - rare). Transfer to cutting board. Important to let it stand 2 minutes for juices to reset. Thinly slice crosswise. Arrange on top of greens . Sprinkle with cheese and walnuts. Garnish and serve.
