In a saucepan, heat cider vinegar, sugar, lemon juice and salt until sugar is dissolved. Set aside and allow to cool. In another bowl, whisk together remaining dressing ingredients. Add vinegar and sugar mixture and stir. Refrigerate. Chop spinach and toss with berries, mushrooms & onions. Optional to add pecans or walnuts.
