10 med red, yellow, or orange(or a mixture) vine ripened tomatoes, cut in half
1 lg walla walla sweet onion, peeled, then quartered, then quartered again
1 lg red or pepper of your choice, seeded, and quartered
6 cloves of garlic, peeled and left whole
1 1/2 cups fat free half and half
4 tbsp light olive oil
1 tbsp pepper
salt to taste
nonstick cooking spray

Here is how you make grilled tomato, onion and pepper salad dressing:

Spray disposable foil pan with nonstick cooking spray.Drizzle pan with 1 Tbsp olive oil. Place tomatoes, onions, peppers, and garlic on pan. Pan should have about an inch side to keep juices from running off. Drizzle with remaining olive oil and salt and pepper to taste. Place on a bbq grill over low heat for about 1 1/2 hrs. Turn a couple of times during cooking time to prevent garlic from burning. Remove from bbq and let cool. Remove skins from tomatoes and peppers.Place all in blender,or food proccesser, including all juices. Add in fat free half and half as needed to get correct consistency for dressing. Salt and pepper to taste . Pour into jars and let set overnight to let all flavors blend together. Makes about 1 and a half 26 oz jars. I added extra garlic powder to mine.
