1 cup of cooked plain couscous (I like pearls)
1/2 cup of steamed fresh asparagus (bite-size pieces)
1/2 cup deli chicken or turkey slices (torn into small pieces)
1/4 cup feta cheese crumbles (tomato & basil flavor)
3/4 cup oil & vinegar veggie mix (my grocery store has this already mixed up behind the counter at the deli- broccoli, cauliflower, shredded carrots, red & yellow bell peppers, & cherry tomatoes tossed together with olive oil and vinegar)

Here is how you make Couscous and Veggie Spinich Salad:

At the beginning of the week, I cook the couscous and steam the asparagus. I cut the asparagus into bite size pieces and store in a container in the refrigerator, as well as the couscous (in a separate container) to access all week long for this salad.Put as much baby spinich as you want into a tupperware container. Add the cold (but previously cooked) couscous, asparagus, chicken/turkey, feta cheese, and veggie mix into the same container with the spinich and put the lid on. Toss the container to get everything mixed together and enjoy!
