1 Can Lentils or 2 cups, cooked
1 can Yellow or Green beans
2 Tomatoes
1/2 large English Cucumber, leave skin on
1 med red pepper, chopped
1/2 white or red onion, chopped
1 avocado, diced (optional)
1 baby zucchini, halved, grilled and sliced
10 asparagus sprears, grilled and sliced
2 oz Feta cheese, crumbled
4 TBSP oil and vinegar dressing

Here is how you make Greek Veggie Salad:

Slice zucchini in half length-wise and place in pan. Prepare asparagus and place in same pan. Drizzle with 1/2 tsp olive oil and sprinkle with salt and pepper. Grill in oven at 400 for 10 min.Place all ingredients (including grilled veggies) in large bowl. Drizzle with dressing. Toss gently to combine and place in fridge for an hour to chill.This salad makes 8-one cup servings. I like to make it a meal so I serve it over 1-2 cups of spinach or salad leaves.
