1 C. pea pods, sliced
1 C. Broccoli, fresh, chopped
1 C. Carrot - raw, chopped
1 C. Cauliflower, chopped
3 Plum Tomato, Fresh, Raw, Large, chopped
1 C. Cucumber Peeled Raw, chopped
1 C. Chickpeas (garbanzo beans)
3 C. spinach, raw, chopped
3 green onions, sliced
1 Lemon, fresh squeezed, and the zest
1 Lime, fresh squeezed, 2 oz
1/4 C. Cilantro, raw, chopped
2 T dill
1 T. cumin
1 T. garlic powder
1/4 t. red pepper
8 T. Nutritional Yeast
S & P to taste


How Do I Make Lisa's Amaranth and Raw Veggie's Salad?

Here is how you make Lisa's Amaranth and Raw Veggie's Salad:

In a sauce pan, mix together Amanranth, red curry paste, veggie broth and bring to a boil, reduce heat and simmer for 25 minutes until broth is absorbed. In the mean time, chop all veggies and combine with garbonzo beans in a large bowl. Add lemon & lime juice and lemon zest. Combine. Add cumin, dill, garlic powder, red pepper, salt & pepper combine again. Add Amaranth mixture when close to room temp. Combine. Last add, cilantro and nutritional yeast, then toss.
