Here is how you make Shrimp and Artichoke Quesadillas:

Blend cream cheese with blender until fluffy. Add yogurt and blend until smooth. Add lemon juice, garlic, and pepper flakes blend. Fold in shrimp, mozzarella, spinach and artichokes. Brush tortillas with 1/2 tsp oil on one side. Spread 1/3 cup mixture on other side and top with second tortilla. Heat in a cast iron skillet 4 to 6 minutes, turning once or until brown.
