1/2 T minced shallots
2 T unsalted butter
2 T diced onions
1 quart low sodium chicken broth
1/2 can pumpkin
1 cup heavy cream
1 cup Half and Half
3/8 cup brown sugar
1/2 t cinnamon
salt and pepper to taste

Here is how you make Butternut and Apple Soup:

1. Steam the squash for 20 minutes, then seed and remove meat.2. Meanwhile, peel and core apples and bake at 300 degrees for 20 minutes, topped with 1 T of the butter and 1/4 t of the Allspice.3. Saute the shallots and onions in the remaining 1 T of butter until translucent.4. In soup pot, add broth, onion mixture and pumpkin. Bring to a boil, then simmer 30 minutes.5. Add cream, Half and Half, remaining Allspice, cinnamon, and sugar.6. Puree mixture, leaving some apple chunks.
