2 lb/ 900 g carrots, finely diced
1 medium onion, chopped
3 celery stalks, diced
4 cups Vegetable Stock
2 medium-size eating apples
2 tbsp tomato paste
1 bay leaf
2 tsp superfine sugar
salt and pepper
celery leaves, shredded to garnish


How Do I Make Carrot, Apple, and Celery Soup?

Here is how you make Carrot, Apple, and Celery Soup:

1.) Place the carrots, onion, and celery in a large pan and add the Vegetable Stock. Bring to a boil, reduce the heat, cover, and let simmer for 10 minutes.2.) Meanwhile, peel, core and dice the 2 apples. Add the diced apple, tomato paste, bay leaf and sugar (ultra-fine sugar is desired) to the pan and bring to a boil over the medium heat. Reduce the heat, partially cover, and let simmer for 20 minutes. Remove and discard the bay leaf.3.) (I omitted this step, but you're more than welcome to add it, just don't forget to add the ingredients to your journal as well). Meanwhile, wash, core and cut an additional apple into thin slices without peeling. Place the apple slices in a small pan and squeeze over 1/4 of a medium lemon. Heat the apples gently and let simmer for 1-2 minutes, or until the apple is tender. 4.) Drain the apple slices and set aside until required. Place the carrot, apple, and celery mixture in a blender or food processor and process until smooth. Alternatively, press the mixture through a strainer with the back of a wooden spoon. Gently reheat the soup if necessary and season to taste with salt and pepper. Ladle the soup into 4 warmed bowls, top with the reserved apples, and shredded celery leaves, and serve immediately.
