1 medium squash (peel it, seed it, should yield 3 cups cubes)
1 medium onion (red or yellow, I used red)
4 cups granny smith apple slices (2 medium apples)
1/4-1 cup unsweeted applesauce
2-3 cups water
allpice (1-2 tsp to taste)


How Do I Make Pure Apple Squash Soup?

Here is how you make Pure Apple Squash Soup:

You can simmer this on the stove or roast it. Simmering is quicker and makes a good smooth soup. I like the flavor of roasting, though.If you are roasting, put the squash, onions and apples in a greased pan and add 1 cup water and 1/4 cup applesauce to simmer a bit. You will roast for 1 1/2 to 2 hours, depending on how the squash cooks.If you are simmering, start with the onions in 1/4 cup applesauce until onions start to soften. Add squash and turn up the heat, adding the rest of the applesauce and then enough water to make it easy to stir the squash (so it doesn't stick and burn; it should NOT, however, float! About 1/2 inch liquid does it)After 5 minutes, add apples and cover, letting the whole shebang simmer for 25 minutes. Check frequently to add liquid if needed (water is fine, the flavor will stay!!)When the vegetables are soft enough for your blender (I used an immersion blender) start to mix them. If you roasted the vegetables you will need to add water to make the veggies blend. The roasting method uses less applesauce than the simmering method)Blend the vegetables into a thick puree and sprinkle with allspice until aromatic and savory. To serve, mix in 1 cup hot water to every 3 cups soup (I shake it in a jar). The soup should be thin, but still coat your spoon.
