1 teaspoon curry powder (mild or hot)
1/3 cup onion, chopped
1/3 cup celery, chopped
2 large carrots, chopped (about 2.5 cups)
1 medium cooking apple, peeled, cored and chopped
1 tablespoon water
3 cups low sodium chicken stock
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup yogurt

Here is how you make Spicy Curried Carrot and Apple Soup:

In a pot, heat olive oil over medium heat. Stir in curry powder and cook for 1 minute. Add vegetables and apple. Stir to combine. Add water and reduce heat to medium low. Cook for 20 minutes stirring occasionally until vegetables are tender.Transfer vegetables to a blender and add 1 cup of stock. Puree until smooth. Add back to the pot along with 2 more cups of stock and season with salt and pepper. Turn heat back to medium and bring to a simmer.
