2 tsp. finely shredded lemon peel
2 tablespoons snipped fresh cilantro
1/4 tsp white pepper
1 lb. fresh asparagus, trimmed and cut into 2 inch pieces
1 12oz can evaporated fat-free milk or 12oz fat free half and half
2 tbsp cornstartch

Here is how you make Spring Asparagus Soup:

In a medium saucepan stir together water, chicken boullion, fresh lemon peel, fresh cilantro and white pepper. Bring to a boil, reduce heat to low, cover and simmer 15 min. Strain liquid, discarding solids, return liquid to sauce pan. Return to boiling. Add asparagus to saucepan. Reduce heat to low and simmer 8 min. until asparagus tender. Remove from heat. Carefully transfer mixture to blender;cover and blend until smooth. Set aside.In same saucepan stir milk and cornstarch together. Cook over med. heat until thickened and bubbly, cook and stir for 2 more minutes, mixture may be slightly foamy. Gradually add in asparagus mixture and cook until heated, stirring occasionally. ladle into bowls. May add a swirl of sour cream, count the extra calories though.
