2 Tbls Balsamc Vinegar
One 10oz can Mild Rotel Tomatoes( or if you like a kick use regular)
14.5 oz can white or Cannelli Beans- rinsed well and drained
2 14 oz cans black beans(divided) both rinsed well and drained
6-8 cups water
ten oz package frozen spinach
3 Tbls raw cilantro( chopped)
1 Tbls onion powder
1 teas ground cumin
.5 cup fage 0 plain yogurt( or any fat free thick style greek yogurt)
2 Tbls lime juice

Brown sausage in non stick pan breaking into small bits.(about 5 min) When brown set aside.In same pan place onion, vinegar and oil and brown until vinegar is evaporated and onion is translucent(about 5 min)Using a fork- loosely mash 1 can of the black beansAdd the mashed black beans, the white beans, the remaining can umashed black beans and all remaining ingredients EXCEPT YOGURT..to large stock pot and simmer 30 minutes until slightly reduced and thickened,Taste- if it is too spicy add the yogurt- if not you can omit the yogurt...or you can also add additional hot sauce salt and pepper if desired. Serve with mexican cornbread and and a salad or sliced avacado. You can also top with cheese of you like.
