Pour the chicken stock into your slow cooker/crockpot and add beans. Slice the sausage down the center and into small slices. They should be bite sized half circle pieces. Add the sausage to the beans and stock.Cook on low for 8 hours, or on high for roughly 4 hours (I cooked on low, the high time is an estimate). The soup should thicken some as it cooks. When the beans are tender and flavorful it's ready to serve. If the soup is not thick enough for your tastes you can add a slurry made with two tablespoons of flour and some water. Be sure to mix your slurry very well before adding it to the soup so there are no clumps.Makes 8 1 1/2 cup servings. This soup also freezes very well. Divide the soup you want to freeze into single serving containers. Cool the soup in the refrigerator, then move to the freezer. To reheat remove or vent the lid and microwave stirring occasionally until thawed and warm.This soup is a bit of a treat as it's very rich, but it's also very filling.
