Saute onions in oil until golden, add garlic, celery, carrots, and mushrooms cooking for about 10 minutes. Add water and bring to boil. Add remaining ingredients EXCEPT SPINACH. When it returns to a boil, lower heat, cover pan and simmer for 25 minutes (stir frequently to prevent sticking and add more water if it becomes too thick).
