Here is how you make Black Bean Coconut Soup:

Empty 1 can of black beans, the can of coconut cream, and 1/2 of the can of Rotel into saucepan and bring to a simmer. Pour mixture in to blender and blend until smooth. Pour blended mixture back into saucepan and add remaining Rotel and remaining can of black beans. Simmer until heated through and ready to serve. Top with fresh chopped cilantro and chopped tomato if desired.*Play around with the consistency, maybe you want to blend all the ingredients...maybe less coconut cream....more Rotel.
