Here is how you make Black Bean Soup (Greg's):

heat water and beans to boiling in 2 qrt saucepan & boil 2 minutes. Remove from heat, cover and let stand 1 hour. Add ham bone, heat to boiling, reduce heat. Cover and simmer 'til beans are tender, about 2 hours (do not boil or beans will burst.) Stir in carrot, celery, onion, the garlic, bay leaf and salt. Cover and simmer 1 hour. Remove ham bone and bay leaft. (Soup can be pressed thru food mill, or place in blender container, cover and blend until unifomr consistency.) Trim ham from bone and stir into soup.
