1 lb dried black beans, rinsed and soaked according to package directions
1 12 oz bag frozen corn
3 medium tomatoes, chopped finely or pureed

Here is how you make Black Bean Soup (vegan):

Heat oil in a large pot over medium high heat. Stir in chopped onion, celery, carrots and garlic for 5 minutes. Add seasonings and cook for another minute. Stir in vegetable broth, half of the beans and the frozen corn. Bring to a boil. Mash or process the remaining beans in a food processor, along with the tomatoes. Stir into boiling soup mixture. Reduce heat to a simmer, cover and cook for as long as necessary until the beans are the consistency you prefer.
