This can be done the day before or you can used left over beans. In a large pan preheat olive oil. Add chpped veggies (except tomatoes) and cook until soft. Chop 2 tomatoes and add to veggies. Place the other 3 tomatoes in a blender with a little water and blend into juice. Add this to the veggies. Pre-cook sausage and cut into chunks. Add to the pot. Put 1 cup of the beans in the blender with a little broth and make into a paste. Add to soup for thickening. Add remaining bean to the mixture. Add broth to get to the consistence you would like. Add salt and pepper to taste. Simmer for at least a 1/2 hour to let all flavors combine.NOTE: You can use any vegetables you like and substitue any type of sausage or bacon. I am a dump cook so the spice measurements are approximate. Add any spices you like.
