The ingredients for Chipotle Bean Soup are:

1 (15 oz) can fat free beef broth
1 (15 oz) can kidney beans, undrained
3 T onions, chopped*
2 T green pepper, chopped*
scant t minced garlic
1 t or more chipotle powder (I like more but be careful!)
1/3 C ff plain yogurt
4 T cilantro, chopped (opt)

* Instead of cutting up small amounts of onion and green pepper, I use the kind that is already chopped and frozen. No need to defrost.

Here is how you make Chipotle Bean Soup:

Combine first 6 ingredients in a blender and blend until desired consistency (I prefer it smooth but DH likes small chunks).Heat completely. Stir in yogurt, while still over heat, until blended in and hot.Divide and if desired, put chopped fresh cilantro on top for flavor.You can also use sour cream instead of yogurt but yogurt is healthier.
