Put beans, water, bay leaf, and red pepper in a large pot and slowly bring to a boil. Reduce heat and simmer for 1 hour. Add the potatoes and simmer for an additional 30 minutes. Spray a non-stick pan with cooking spray and saute the onion until golden brown. Stir in the curry powder.Using a potato masher, coarsely mash the beans and potatoes with the liquid in the pot and then add the curried onions.
