Over the years I have tried to create a recipe that stands up to my memories and would like to share it with you here.In addition to the preparation and cooking time you will need to allow time to soak the beans.Although I have added this to the Appetizers and Soups category, this is really a [light] meal in itself.The name has a double meaning: the word 'Festival' is a reminder of the inspiration for this soup and also refers to the colourful beans which look so festive in themselves!You could easily halve the quantities to make a six serving pot of soup.

Vegetable stock cube or bouillon
3 tbspoons olive oil

How Do I Make Festival bean soup?

Here is how you make Festival bean soup:

1. Soak the beans overnight [or for min 6 hours] Rinse. 2. Place in pan and cover with fresh water. Bring to the boil. Boil rapidly for 10 minutes then turn the heat down and simmer for 20 minutes.3. Meanwhile, finely chop the onions, celery, courgette and carrots [I use a v slicer to julienne the latter two].4. Gently fry the onions in the oil.5. When turning transparent, add the courgette, carrot and chopped garlic and gently continue to fry for 5 minutes more.6. Add the marmite and tomato puree and stir. Remove from heat until beans are ready.7. Drain beans and add to vegetable mix. Add the stock cube or bouillon and 3 ? litres of water.8. Bring to the boil, then lower heat and simmer gently for approximately 30 mins or until beans are tender but retain their shape and texture.Serve with warm bread rolls.Number of Servings: 12Recipe submitted by SparkPeople user SCORPIO_STAR.
