Living near a Garden Fresh market, where they sell "day old" vegetables...I found myself needing to use up some of the 15 red, orange and yellow peppers I had purchased (for less than $3), as space in the freezer was dwindling. I killed two birds with one stone with this recipe, as I used the remnants of a 4 pound package of broccoli that had seen better days, as well as the red pepper. 1 can green beans with liquid

1 cup chopped onion
1 large red pepper, chopped
1/2 tsp dry oregano
1/4 tsp dry thyme
1/2 tsp granulated garlic
lemon pepper and salt to taste
1 Tbsp olive oil
1 can evaporated milk (skim or 2%)

In an small fry pan, heat the olive oil and saute on medium heat the onion, red pepper, celery and carrots with the seasonings till the onions are translucent and golden (seasonings: oregano, thyme, lemon pepper and garlic---you may substitute chopped fresh garlic for the granulated in this step). Meanwhile, in a large soup pot, simmer the frozen broccoli and green beans in the chicken broth. When the broccoli is tender (but not cooked till it's gray), remove the beans and broccoli from the broth, keeping some small broccoli pieces to the side, and with the onion mixture from the fry pan, blend till combined and nearly smooth in a food processor or blender. Return the result to the broth along with the reserved broccoli and stir in the can of evaporated milk. Thin with more chicken broth if the mixture is too thick.
