1 pound dried Great Northern beans (navy beans)
6 cups of water
1 medium onion, chopped
2 cloves garlic, crushed
1 medium-size hot red pepper
1 bay leaf
2 tsp salt
1/2 tsp dried whole thyme
1/4 tsp pepper
4 medium potatoes, peeled and cubed
3 medium carrots, peeled and cut into 1/2 inch slices
2 cups chopped cooked ham

Here is how you make Ham and Bean Soup (OAMC):

Sort and wash beans, place in a dutch oven. Cover with water 2 inches above the beans, let soak 8 hours. Drain beans and return to dutch oven. Add 4 cups water and next 7 ingredients. Bring to a boil, cover, reduce heat and simmer 1 1/2 hours, stirring occassionally. Add remaining two cups of water, potato, carrot and ham.
